Kacang Hijau - Seri Langka - Pakantan - Natural Extended
PAKANTAN TYPICA — MANDAILING NATAL, NORTH SUMATRA
Before the name Mandheling became famous across Europe and America, there was Pakantan.
Located in Mandailing Natal, Pakantan is one of the areas where Arabica coffee was first cultivated in Sumatra during the 19th century under the Dutch colonial forced cultivation system. Coffee was then collected at the Tano Bato warehouses and exported through the port of Natal.
The region's golden era was interrupted by a coffee leaf rust outbreak around 1900, prompting many farmers to switch to Robusta. Yet the old Typica variety never completely disappeared from this land.
This lot is Typica from Ulu Pungkut, grown at an altitude of 1,200–1,400 meters above sea level and processed using an extended natural method. Whole coffee cherries are fermented and dried longer than in conventional natural processing, giving the fruit sugars more time to develop and influence the beans.
The flavor direction points toward grape-like tartaric acidity, tropical fruit, and almond.
For roasters who sell Mandheling but have never worked with Typica from its historic homeland, this Mandailing green bean is a piece of coffee history you can roast for yourself.
A historic origin. An old variety. Your roast, your interpretation.

Why Is Our Green Bean Quality More Transparent?
Most marketplace sellers claim Grade 1 quality based on a single pass through a coarse mechanical sorting machine.
At Coffest Roastery, we implement three stages of physical sorting and refinement:
1. Suton Machine
Removes foreign materials such as stones, twigs, dust, broken beans, and residual husks that make it through earlier processing stages.
2. Optical Sorting Machine (SORTEX)
Uses modern optical sensor technology to eject black beans, sour beans, and beans with defects caused by insect damage.
3. Hand Sorting (Manual Pick)
Our expert team performs the final manual inspection to remove fungus-damaged beans and bring the defect count as close to zero as possible.
Drying is carried out using indirect sunlight through a greenhouse-effect technique to preserve optimal flavor potential.
