There are no grapes in this coffee. Wine Process is the name given to whole-cherry fermentation carried out for much longer than usual, allowing flavor notes reminiscent of red wine to develop. No alcohol or flavoring is added. The process relies entirely on time, temperature, and careful monitoring, because prolonged fermentation without proper control does not produce wine-like character; it results in flavor defects instead.

This lot comes from Arul Badak, Central Aceh, at an altitude of 1,450–1,600 meters above sea level, featuring the Ateng Super variety. Our assessment points toward winey, jackfruit, and dark cherry.

This is not a coffee for customers who drink milk-based coffee every morning. It is a coffee for your manual brew menu and for cupping sessions you want to showcase.

Filters out foreign objects such as stones, twigs, dust, broken beans, and silverskin that may have passed through from earlier processing stages.

2 // Optical Sorting Machine (SORTEX)

Uses modern optical sensor technology to eject black beans, sour beans, and beans damaged by insect bites.

3 // Hand Sorting (Manual Picking)

Our expert team performs the final manual inspection to remove fungus-damaged beans and ensure that defects are reduced to nearly zero.

The drying process uses indirect sunlight through a greenhouse system to help preserve the coffee’s optimal flavor characteristics.
