Green Bean - Arabica - Papua - FullWashed
Coffee arrived in the Baliem Valley relatively late, introduced by missionaries around the 1950s and 1960s, long after it had reached Java and Sumatra. To this day, much of the coffee processing is still done by hand, and the biggest cost associated with Wamena coffee is not on the farm but in transporting it out of the valley. That is why Papua coffee has always commanded a higher price than its production volume alone might suggest.
This lot is a Full Wash coffee from Wamena, grown at an altitude of 1,400–1,600 meters above sea level in a valley surrounded by the Jayawijaya Mountains. Our assessment points toward notes of cocoa nibs, honey, and chocolate: sweet, rounded, and understated.
For coffee shops, this origin fills a gap on your menu map, especially when most competitors stop at Sumatra and Bali.

POTENTIAL NOTES
Cocoa Nibs | Honey | Chocolate
We write potential notes, not tasting notes. This is green coffee, not roasted coffee. What ultimately ends up in the cup depends on your roasting profile. We simply provide a starting point.
EVERY LOT GOES THROUGH QUALITY CONTROL
Origin, grade, processing method, moisture content, density, and defect count. We inspect, store, and record every lot.
Coffee is not magic. Coffee is a process, and processes can be tested.
TRIPLE PICK QUALITY ASSURANCE
Why Is Our Green Bean More Reliably Sorted?
Most marketplace sellers claim Grade 1 quality based on just one round of coarse machine sorting. At Coffest Roastery, we apply three stages of physical purification:
1 // Suton Machine
Filters out foreign objects such as stones, twigs, dust, broken beans, and silverskin that may have passed through from earlier processing stages.
2 // Optical Sorting Machine (SORTEX)
Uses modern optical sensor technology to eject black beans, sour beans, and beans damaged by insect bites.
3 // Hand Sorting (Manual Picking)
Our expert team performs the final manual inspection to remove fungus-damaged beans and ensure that defects are reduced to nearly zero.
The drying process uses indirect sunlight through a greenhouse system to help preserve the coffee’s optimal flavor characteristics.
