Puntang Sultani Estate Lini S Arabica Coffee Beans
Single-origin, specialty-grade coffee processed using the Natural method. Roasted fresh after your order is placed.
WHY IS COFFEE LIKE THIS OFTEN DESCRIBED AS SOUR? >>
“Some cups arrive quietly. This one arrives the way daylight does through a gap in the curtain: narrow, sharp, impossible to sleep through. You are awake now, and you did not decide to be.”
Three flavors, and none of them overlap. Grapefruit opens the cup, pineapple fills the middle, and plum closes with a darker sweetness.
From Sultani Estate on the slopes of Mount Puntang in West Java, this coffee features a single varietal: Lini S, a varietal represented in 12 of the 26 top-ranking coffees at Indonesia’s inaugural Cup of Excellence in 2021. The cherries are dried whole, and we roast these Arabica beans to a light-medium profile so each of the three flavors remains distinct.
In our language, one word is used for two entirely different things: sour. The sharpness of fresh citrus and the sourness of food that has gone bad share the same word, even though the first is a flavor and the second is a sign of spoilage.
That is why many people reject bright coffees before they get to know them. But the difference is something you can taste.
Fruit acidity rises and then fades. In this lot, it settles into the sweetness of plum on the finish. Spoilage does not fade away; its flavor lingers, turning into a sharp, overpowering fermented aroma, without ever resolving into sweetness.
That is what we look for at the cupping table before approving these Arabica beans.
Acidity is not a defect. A defect never finishes sweet.
