WHY ARE THERE FOUR TASTE NOTES? >>
“Before you have the words for it, you already know whether you like it. The vocabulary comes later, if it comes at all, and it was never the point. Language is how we compare notes afterwards. The cup does not wait.”
Four descriptors on this lot’s cupping sheet, not three: red berries, mango, sweet chocolate, and banana.
Red Bourbon from Sultani Estate on the slopes of Mount Puntang—the same farm as our Puntang Prism. Natural processed, light-medium roasted. The only difference is the varietal, and the fruit takes a different direction with it: Prism leans toward citrus and pineapple, while these Arabica beans move toward red fruit and rounder tropical sweetness.
Those four words are not a promise. Tasting notes are the closest shared reference point two people can agree on at the cupping table, tasted at a specific ratio and temperature. And the flavor keeps evolving as the cup cools.
If you find mango at home but cannot detect banana, the tasting sheet is not wrong, and neither is your palate. Water, grind size, and roast age all influence what comes through.
We write down what we actually find, not what is easiest to sell. If selling were the goal, we would have replaced these four descriptors with two safe, undisputable words.
We send these Arabica beans with the original tasting notes, exactly as they are.
Tasting notes are a direction, not a promise.
