​Have you ever wondered why two coffees from the exact same region can taste completely different? One might burst with intense, fruity sweetness, while another is crisp, clean, and delicate.


The secret isn't just the bean—it’s the post-harvest process. At Coffest Roastery, we curate each of these processing methods with strict standards to maximize the unique character of every coffee bean.

1. The Fully Washed Process (Clean & Bright)


This method is a favorite among manual brewers (like V60 or Chemex users) who are looking for ultimate clarity in their cup.

  • The Process: After picking, the coffee cherries are run through a pulper machine to remove the outer skin. The mucilage-coated beans are then fermented in water tanks to break down the sticky fruit layer, washed completely clean, and laid out to dry.

  • Flavor Profile: Produces a coffee with a light body, bright acidity, and a highly "clean" taste where the origin's true notes shine through.

  • Best For: Coffee drinkers who enjoy their coffee black with a light, fresh, and slightly fruity flavor profile.


2. The Natural Process (The Sweet Fruit Bomb)


As the name suggests, this is the most traditional method. It uses the least amount of water but takes the longest time to perfect.

  • The Process: Freshly picked coffee cherries are dried whole, with their skins still on, directly under the sun. They must be turned frequently to prevent rotting. During this long drying phase, the natural sweetness and sugars of the fruit flesh absorb directly into the coffee seed (bean).

  • Flavor Profile: Known for a heavy body, intense sweetness, and incredibly strong fruity notes (often resembling berries, tropical fruits, or wine).

  • Best For: Adventurous coffee lovers looking for a unique taste sensation, a fragrant aroma, and a heavier mouthfeel.


3. The Honey Process (Balanced Sweetness)


Don't let the name fool you—there is no actual honey involved! The "honey" refers to the sticky, sweet mucilage left on the bean.

  • The Process: The outer cherry skin is peeled off, but the sticky mucilage layer is intentionally left intact. The beans are then immediately sun-dried. The coffee is categorized by color based on exactly how much mucilage is left on the bean and the drying time:

    • White Honey: Very little mucilage (creates a clean taste).

    • Yellow Honey: Medium mucilage (medium sweetness).

    • Red Honey: More mucilage (sweeter and fruitier).

    • Black Honey: Abundant mucilage (the most complex, bold flavor).

  • Flavor Profile: The perfect middle ground. It offers a blend of the Fully Washed's bright acidity and the Natural's deep sweetness, resulting in a soft, creamy texture.

  • Best For: Those who want coffee with just the right amount of sweetness, a soft freshness, and everyday balance.
