WHY DOES A MEDAN ROASTERY SELL COFFEE FROM WEST JAVA? >>
“There is a moment, two or three sips in, when a cup stops being the coffee you expected and becomes something you have to pay attention to. It does not happen often. When it does, you put the cup down for a second, then pick it back up.”
Wanoja is not the name of a village, but a farmers’ group based in the Kamojang Valley, on the border between Bandung and Garut. The cherries are dried whole, with their skins intact, and the result comes through from the very first sip: tropical fruit up front, berries in the middle, and honey-like sweetness that lingers long after the coffee is gone.
We roast these Arabica beans to a light-medium profile to keep the fruit notes from being overshadowed.
We are a roastery based in Medan. Gayo, Lintong, and Mandheling are practically in our backyard, and most of our shelves are indeed stocked with coffees from those regions.
But the flavor in this lot is something we cannot get from Sumatra. The reason is processing, not quality. Most Sumatran Arabica is processed using the wet-hulling method, which increases body and reduces acidity while also softening its fruit character. That is why our Single Origin series speaks in notes of chocolate and spice rather than tropical fruit.
To find this much fruit, we had to venture beyond our own island. This is the Arabica coffee we brought home.
Our shelves are not arranged by geography. They are arranged around what is missing.
